Dress Your Dishes: How to Use Fruit Vinegars Beyond the Salad Bowl

If you’ve got a bottle of artisan fruit vinegar sitting in your pantry and you're not sure what to do with it besides a standard salad dressing, this one is for you.

A really good fruit vinegar is one of the most underrated secret weapons you can have in your kitchen. Often, people pick up a beautiful bottle of raspberry, blackberry, or apple vinegar because it looks and smells amazing, but then it sits on the shelf because they aren't quite sure how to use it.

If you think vinegars are just for lettuce, it’s time to upgrade your dishes. Here are a few of my favourite, honest ways to use fruit vinegars to lift your everyday cooking:

1. The Perfect Pan Deglaze

Next time you pan-fry chicken breasts, pork chops, or steaks, don’t let those lovely caramelised juices at the bottom of the pan go to waste. After you take the meat out to rest, pour in a splash of fruit vinegar (blackberry or raspberry works beautifully with pork and game). Let it bubble away for a minute, scraping up the bits from the bottom. It creates an instant, glossy, restaurant-quality reduction with zero effort.

2. A Zingy Marinade for Roasted Veggies

Before you pop your roasted root vegetables or Mediterranean veg into the oven, toss them in a little olive oil, salt, and a splash of fruit vinegar. As they roast, the sugars in the fruit vinegar caramelise, leaving you with veggies that have a gorgeous, subtle tang rather than just a heavy sweetness. 3. Drizzled Over Fresh Fruit & Desserts

It sounds a bit backwards, but a high-quality fruit vinegar over fresh strawberries or a good vanilla ice cream is spectacular. A splash of strawberry or dark fruit vinegar cuts through the richness of dairy and intensifies the natural flavor of summer berries. It’s an effortless dessert trick when you want something impressive but simple.

4. Level Up Your Sauces and Gravies

If you’ve made a Sunday roast gravy or a rich tomato pasta sauce and it feels like it’s "missing something," it usually needs acid. A teaspoon of fruit vinegar stirred in right at the end doesn't make the dish taste like vinegar—instead, it wakes up all the other flavours and cuts through the heavy fat.

5. A Refreshing Summer Shrub

You don't just have to eat it—you can drink it! Pour a small splash of your favorite fruit vinegar into a tall glass with crushed ice, and top it up with sparkling water or tonic (or even Prosecco). It makes an incredibly sophisticated, sharp, and refreshing non-alcoholic drink that feels a lot fancier than plain squash.
